Life Recap...

Long time no write….

Things are crazy busy right now!! I am in my last couple of my weeks of my externship and I’m really ready to MOVE ON!! I’ve learned a lot from the place I am working at, but the biggest thing I have learned it’s not the type of work I want to do in my pastry career. Their main business is custom cakes and honestly that’s not where my passion lies. I want to be a pastry chef, not just a cake decorator or cupcake baker, but overall I think it’s really given me a clear picture of my career path.

In other news, I am getting married in exactly 1 month today!!!!


The time has flown by and I am anxiously counting down the days, hours and minutes until we say “I do”. As far as wedding planning goes, were pretty much done, I have my final dress fitting at the end of the month and the last time I saw the dress it was coming along perfectly.

Random side notes....

I’ve officially become OBESSED and ADDICTED with the show “Criminal Minds”. I could slap myself for just discovering this show. It totally scares me, and is slowly making me a recluse, but I LOVES IT!! If you watch it, how much do you love Garcia...she is my favorite!

I’ve made some fun stuff at the bakery I work at and cake balls are one of my favorites. I know they’ve been around for awhile, but these little bites of cakes are slowly turning into my new crack!!  ( I will admit that I didn't want to look at them for awhile after dipping a few hundred of them)


Amazon is my new “Boo”; I almost died when I found out I could get free two-day shipping. Literally I’ve been up at 2am ordering books and running home with excitement for their delivery.  I swear they sell EVERYTHING too, if your looking for a lung, check out Amazon!!

In the last week I’ve purchased 8 cookbooks and I made these last night from one of the books I got called “Cookiepedia" (if you love cookies, get this book, its got great recipes).

(This was my first time trying Dulce De Leche, which is a caramel made with sweet condensed milk....can I just say I stopped licking the can only when I realized both the boy and the dog were staring at me...SO GOOD!!"
Life is busy, but its good and its only getting better.  Thanks for everyone who has been saying hello and sticking around.  I promise to be a little better about the updates!!

Weekend Recap...

I had a real weekend and I LOVED it!  I still had to work a bazillion hours, but I had one whole day for myself and enjoyed every minute. 

We took a road trip to officially see the chapel and it was GORGEOUS, It made me even more excited for that day to get here. The only downfall is this little hike you have to take from the main building to get to the actual chapel.  (re-evaluating my shoe choice), but knowing who will be waiting up there for me, its totally worth it.


We also hung out with friends and ate great BBQ, I got to assist on a wedding at work and learned just how stressful it really is, Ate a ton of dessert and I think i found my next school option...LOL!

Throughout all the fun we got to have, many of our friends were going through a more stressful time.  There have been some horrible fires burning very close to Austin and the surrounding areas.  I've been hearing some horror stories of families having to evcuate their homes and actually losing them.  Its so sad.   These are the things that really make you APPRECIATE everything.

Weekend Recap...


I had such a great visit with my little sister; we did a ton of shopping, laughing and tons of eating. We even had a scary encounter when her car randomly shut off on the freeway when I was driving, to my surprise I was the calm one. (Guess my big sister instinct kicked in).

The boy flew in early Saturday morning, and to my disappointment the airport was not near as interesting as my previous visit. My sister literally left a few hours after his arrival so we just kicked back the rest of the weekend and did nada. We finally got project “DEATH OF ERICA CLEANING” done, so it was nice to just lounge around and not have anything to do. (We even got new pillows, so thank you person who invented memory foam you truly are my new GOD!!)


In school news I am currently in advanced cake decorating techniques and were working on our final project, which is a wedding cake. Yesterday was our first day of production and I felt like I worked my booty off. After this class is over we have a week break and then there is only 6 weeks left of school as a whole. I am SO excited to be done and can’t wait to rekindle my relationship with sleep again.  I'm still working on securing the perfect internship.  I've gone on a few interviews but once I get there it doesn't feel right and I don't want to be stuck somewhere that I hate and don't feel like I am getting anything out if it.  So wish me luck on finding something AMAZING!!

This upcoming weekend were planning a trip to IKEA and the bank to open up a joint account. Even though we’ve been together for a long time and have gotten engaged, the thought of opening a joint bank account makes it seem REAL…ha ha.


Oh, is anyone hooked on my new guilty pleasure "My Big Fat Gyspy Wedding", oh my...this show is the hottest of messes and I LOVE IT.  After watching it I am totally thinking we are going in the wrong direction with our wedding.  How hot would I be dressed like this...ha ha!!

TGIF...

So it’s been a minute since I talked about the Wedding, or Wedding planning. Mainly because we don’t have time to breathe, let alone plan a wedding…

 Well I am going for my first dress fitting next month, and I am super nervous, because the CONTROL FREAK has not seen anything related to this dress since our first meeting. (and those were drawn sketches), so I have no idea what I am in store for..**BITES NAILS**

I’ve been thinking about little aspects of the big day, and I truly could care less about all the hoopla and hurrah that can surround a wedding. I just want a special day that legally unites me to the man I truly love. (maybe not so much this morning, for various reasons…LOL).

But here are a few things that have been inspiring my little brain when it comes to our special day…

Well I am counting down the seconds until the weekend, things going on...
Day trip to the zoo, picking up my bright pink MAC lipstick, lemon creme brulee, organizng my crazy closet, seeing "HANNA" and sleeping in (or so I would like to think, but then I will be awaken by a CRAZY little dog who has some how fallen in LOVE with the loudest dog toy...ha ha!)

TGIF...

Sometimes writing something out can ease a lot of frustration. After putting it out there that I was having a rough day things actually started to look up. In class we made a TON of bread and at this point I can’t even move. Bread truly is my weakness and when its hot and fresh and slathered with Nutella I become SHAMELESS….



In wedding news, I am so excited we are going to be doing engagement photos in a few weeks. The cool thing is the person shooting is Miss Amy, a fellow blogger. I started reading her blog, because she seems like the sweetest most down to earth person who shoots some bad ass photos, plus I thought it was cool she lives close to my own hometown.

Well when I knew I would be making a visit in a few weeks I immediately contacted her (thank you TWITTER) and TA-DA….were about to make some MAGIC!!  I can’t wait to meet her and have her shoot us… make time to check out her blog. I promise you will like her as much as I do!!

I have class on Saturday…yes, on Saturday and its pretty much all day, so my weekend will be a short one.  I want to see this movie...



I really like Natalie Portman as an actress and the plot seems really different.  I heard its a limited release this weekend,so we will see.  Last weekend we saw that new movie with Ann Hathaway, "Love and other Drugs".  It was okay, she pretty much naked the whole movie.  So its a chick flick that your dude won't have an issue sitting through...LOL!

I also think my mouth needs to be involved with this....

Weekend Recap....(Thanksgiving Edition)

Thanksgiving was so nice and low key. The Turkey came out PERFECT and I totally have to give my FI a high five for making magic with that thing.


He started the turkey early that morning and it was ready by noonish….now on my end I didn’t roll out of bed until about 1:30 and I only had to do the sides, which took WAY longer than expected, plus I wanted to show off some of my culinary expertise and insisted on making everything by scratch. So we didn’t actually eat dinner until 7, but it was so GOOD, it was totally worth the wait.

We had Cajun turkey, buttermilk biscuits, mashed sweet potatoes and my take on green been casserole (Green beans, green onions, bacon, mushroom soup topped with turkey stuffing).


Then for dessert I went all out and made Banana Cream Pie all from scratch (and totally forgot to take a picture of it).


The rest of the weekend we just chilled out and enjoyed as much time together as possible. We picked out our wedding colors, Cobalt Blue and Grey


We purchased the look for the boy

(he is going to look so DAPER, and not so much like an Asian drug lord)

 I looked at dresses (which I am totally undecided on, but I do know I want something tea-length).

(Loving this dress, but can only imagine a boob falling out...just saying)

I had a horrible experience with a sales girls at David’s Bridal telling me that they only had 2 dresses in MY SIZE for me to try on…BITCH PLEASE…people can be so rude!! At this point I have looked at several online retailers and currently emailing with an Esty seller about a custom dress, so I will keep you informed. We also picked the venue for the ceremony; Dreamy is the only word I can use to explain it. It’s going to be picture perfect for our small intimate wedding.

I have to admit the whole idea of wedding planning was stressing me out, but all of sudden things are falling into place. 

We also went to the most AMAZING restaurant supply store; they had everything you could think of for super cheap. I had to really talking myself out the industrial margarita machine, but am really thinking about going back for the funnel cake supplies.


We also got some additonal work done on some old tattoos, when I get a chance I will post some updated pictures of the work.
