Three day weekends are the best...

We actually got up super early and went grocery shopping, which I am slowly starting to dread. Why are groceries so damn expensive? We've been really watching what we eat and tryinig to buy nothing but healthy stuff and that makes it even worse. Its really sad to say in America its cheaper to get processed junk than fresh food.

We treated ourselves to an early movie and saw “Contraband” with Mark Walberg (who will always be Markey Mark in my heart…I totally still have the funky bunch on cassette tape, yes people cassette tape). It was really good, despite the guy sitting a few seats down from us, who got up a MILLION times. (DUDE, if you can't hold your pee pee, maybe you should't get a big gulp.) I kind of (aka REALLY REALLY wanted to) wanted to see "Beauty and the Beast" in 3D. I love that movie pieces and though it would be so much fun to see it remastered, but the husband was like no way am I paying 20 bucks for movie tickets for a movie you have at home on DVD....BOO to BOYS!!

Then we spent way to much time in Target, my home away from home. Now that they have their Valentines Day stuff out I pretty much want EVERYTHING, which is not good for my bank or account (or marriage...LOL).
Came home and gave someone a bath...after they had thrown up all our bed. What I love is how he threw up, ran away, then came back and then had the nerve to beg for a treat...LOL!!

Weekend Recap (Husband Birthday Edition...)

We celebrated the husband’s birthday this weekend and it was such a low key glorious day. I made him a special breakfast to start the day with, which included egg whites, turkey sausage and sweet potatoes pancakes.

We lounged around watching movies and he LOVED his gift…. BeachBody’s “Insanity”.

We ended the night by going to a Brazilian steakhouse, which was a very unique experience. Basically you get a card that you flip over to show its green side and before you know it you’re bombarded with meat. The hubs was in MEAT HEAVEN!! Meat was coming from all different directions and it was so good. Once your ready for them to stop, you just flip your card over to the red side and that lets them know not to bother you. It was a really fun night, but I think I can go the rest of the month not eating another piece of meat…LOL!

I really wanted to have this well thought out post to start of 2012, but I don’t. Life is good right now and I am only hoping in 2012 it will get better. I have an amazing family, my career goals are getting to where I want them to be and I scored a HELLO KITTY microwave over the weekend….what the HECK could be any better?

New Years Eve was kind of dull for us. I had to be at work at 5 am so late night partying was totally out of the question. We stopped by some friends house for a few mins and were in bed by 9...only to be awaken at midnight by cops and fireworks. (YAY US!!)

This weekend is the Hubs birthday and I am planning something low key and nice for him. We might shake things up and go to a late night movie (WATCH OUT). As I've gotten older I sometimes think I am missing out on all this extra night life, but when I actually partake I am usually disgusted and ready to go home within the first 5 mins. Call me lame, but I enjoy being in the saftey and comfort of my own home!

Our photographer sent us a few sneak peeks of our wedding photos and I love how they came out. Its kind of funny because some of them I look at my face and think…LOL…but there was so much fun and laughter going on that day, it’s a true expression of my pure happiness. (Plus were kind of GOOF BALLS, so I am surprised at what she got from what she was working with…LOL)

Also, I felt like a cheap stripper by time the day was over, my DIY glitter shoes...OH LORDY. Lets just say I totally got a lesson on how NOT to put 10 pounds of glitter on shoes. Three weeks later and were still finding glitter all over the place.

Were back, things are slowing down and getting back to normal.

Our trip involved lets of lounging, eating amazing food and tons and tons of WALKING. Oh my…my little leggies were aching every night after all the walking we did, but we got to see a ton of the city. The bed and breakfast we stayed at was pretty darn amazing and we are already thinking about going back for our 1 year anniversary next year.

I think most of all I enjoyed just spending time together, doing nothing and getting to know each other on a new level…a husband and wife level. We’ve been together for almost 5 years, but every day I get the privilege of learning something new about the person I love. (Like how he was able to hide getting me an AMAZING gift for our trip)

Now that were home, were figuring out our next step. Right before our wedding I got offered a pastry position at a very trendy restaurant here in town. So far I’ve only worked a week, but I LOVE it. Its confirmed, reaffirmed and proven that this is what I was put on this earth to do everyday. My days are SUPER early, but it hasn’t felt like work yet and that’s such a blessing.

At this moment in my life I don’t think I could be any happier.

Weekend Recap...

This weekend actually felt normal…I got to sleep in, or at least tried to. My body must be use to get up early, because I tried my darndest, but I was up super early.

Friday was a Holiday so we had the whole day to spend together and it was great. The boy has started running, and since the weather was pretty awesome me and Loco went along to do a little walking.

We went out with friends for drinks and dinner…and someone had WAY too many mimosa’s and lost their wallet, only to realize it the next day, then they found out by the restaurant that a good Samaritan had turned it in. Go to pick it up from the restaurant to find it was run over and one of my cards was broken and the others were bent up. I am just elated that someone turned them in…and I can still use them until I get my new ones in the mail.

Saturday we tried a new local ice cream place in town called “Lick”….AMAZING is all I can say.

We got to try so many unique and fun flavors, and I settled on Carrot/Tarragon and Vanilla Bean, while the boy ended up with mix mosh of four flavors…one including cilantro lime…which was EXCELLENT.

Movies later that night to see “Immortals’, which was just okay. (Totally should have waited for Netflix) Finished off the weekend with wedding hair pieces and boutonnières and baked butter and sugar.

The only thing freaking me out, is the forecast of rain this weekend. Its pouring as I am typing and I am hoping we don't endure it this weekend....BOO!!

This week has already been super busy and it’s only Wednesday. Monday we went and picked up our marriage license. For some reason I thought it was going to be this long drawn out process, but it was SUPER QUICK. We picked a number, not even 5 minutes later we were at the front desk, paying our fee and signing off on our paperwork. (So, theres not backing out now...LOL)

Tuesday the boy’s office threw us a wedding shower. Now, I have to be honest I was totally against this whole process. I didn’t want any showers, and when he told me his office wanted to do something I was all for bailing out. I have to say they shocked and surprised me and totally went all out. There was tons of food, and gifts and someone even made us a wedding cake.

At this point I think were just ready for the day to get here and for HONEYMOON TIME!! I can't even explain how excited and stoked I am for our trip.

Also, as of last week I am offically a CERTIFIED Pastry Chef. Graduation won't be until April, but its feels good to be accomplished with one of many goals. November has been so good to me, and its just the beginning!!

Guess who got new glasses....and yes, they are pretty SNAZZY!!

So I am trying to wrap my mind around the fact that everything is coming a head in a little over two weeks….EEK!! Literally this time has flown by, it’s CRAZY!!!

Externship is officially over this week, I’ve applied for several jobs in the field and I actually got offered two of them. The disappointing thing is that many don’t offer the hours or pay my office job does, so it would be a HUGE adjustment. I was rather depressed last week trying to figure out what do. I really want to jump into this field, but it might not be a possibility right away. I’ve just had a lot to think about and still today I don’t feel like I have a real resolution. Ultimately I would love to get my company off the ground and get to a point where it’s the only thing I do.

Its frustrating because one one hand I have all these exciting and uplifting changes occuring and on the other hand I feel lost and sad at other changes....DAMN YOU LIFE!!

Over the weekend, the boy and I went to the most amazing DRAG show.

It was Vegas themed and so entertaining. They did Katy Perry, Celine Dion and Lady Gaga. I left feeling like a shabby girl after seeing these DIVAS in action. I mean they were doing these dance moves in killer heels, I can't even get out of my car in flats without falling down...LOL!!

Its getting chilly here and for me nothing is better than a warm dessert and a hot mug filled with tea. Yesterday I tasted the most amazing cupcake and when I got home I had to figure out the recipe…which I did!! ( I felt like a mad scientist in my kitchen breaking down the recipe)

Who knew Sweet Potatoes would make the most amazing moist cupcakes EVER. Their even better the next day!!

Long time no write….

Things are crazy busy right now!! I am in my last couple of my weeks of my externship and I’m really ready to MOVE ON!! I’ve learned a lot from the place I am working at, but the biggest thing I have learned it’s not the type of work I want to do in my pastry career. Their main business is custom cakes and honestly that’s not where my passion lies. I want to be a pastry chef, not just a cake decorator or cupcake baker, but overall I think it’s really given me a clear picture of my career path.

In other news, I am getting married in exactly 1 month today!!!!

The time has flown by and I am anxiously counting down the days, hours and minutes until we say “I do”. As far as wedding planning goes, were pretty much done, I have my final dress fitting at the end of the month and the last time I saw the dress it was coming along perfectly.

Random side notes....

I’ve officially become OBESSED and ADDICTED with the show “Criminal Minds”. I could slap myself for just discovering this show. It totally scares me, and is slowly making me a recluse, but I LOVES IT!! If you watch it, how much do you love Garcia...she is my favorite!

I’ve made some fun stuff at the bakery I work at and cake balls are one of my favorites. I know they’ve been around for awhile, but these little bites of cakes are slowly turning into my new crack!! ( I will admit that I didn't want to look at them for awhile after dipping a few hundred of them)

Amazon is my new “Boo”; I almost died when I found out I could get free two-day shipping. Literally I’ve been up at 2am ordering books and running home with excitement for their delivery. I swear they sell EVERYTHING too, if your looking for a lung, check out Amazon!!

In the last week I’ve purchased 8 cookbooks and I made these last night from one of the books I got called “Cookiepedia" (if you love cookies, get this book, its got great recipes).

(This was my first time trying Dulce De Leche, which is a caramel made with sweet condensed milk....can I just say I stopped licking the can only when I realized both the boy and the dog were staring at me...SO GOOD!!"

Life is busy, but its good and its only getting better. Thanks for everyone who has been saying hello and sticking around. I promise to be a little better about the updates!!

It’s funny that I am writing this post exactly 2 Months before our wedding date. This weekend really changed and defined my relationship.

We went to the Austin City Limits (ACL) festival on Friday. Being honest I was not too excited about the whole experience, I’ve posted about this in the past, but I suffer from agoraphobia, for those who don’t know about it you can read about here. I knew I was in store for an anxiety filled weekend, but I wanted to be brave and try pushing myself. Things didn’t start off so well, when we had to get off the shuttle after I had a small panic attack, but honestly after we got off I was good.

We ended up taking a Pedi cab, which was the craziest/coolest thing ever and once we got to the concert, things were going GREAT, I got to see Brandi Carlile and she was AMAZING (and made my Girl Crush even BIGGER). For as many people that were there, things were actually really organized and things ran really smoothly. We decided to camp out in one spot since most of the shows we wanted to see where at this stage. We saw Big Boi, Damien Marley, Nas and from a distance we could hear Foster the People, but didn’t want to move, for fear of losing our spot. As the night progressed we started to notice more and more people crowding around our space. When the nights headliner, Kayne West came on we were literally smashed against 30 thousand other people. (I heard on the news the next day there were over 65 thousand people at the festival).

I thought I could handle it, I had taken some medicine before hand, but I couldn’t. I had one of the biggest panic attacks of my life and I broke down. I was frustrated for letting myself get into this predicament and also for ruining the boy’s chance at seeing Mr. West. I couldn’t hold off, I started crying, I couldn't breathe, my head was spinning and my chest was pounding. In that moment I thought I was going to die, I know it sounds crazy, but that’s what my mind was thinking… The next thing I knew, I was being calmed down, I was being talked to in a manner that made me feel safe and secure. My hand was being grabbed and I was being rescued. When I opened up my eyes I could see I had been saved.

I wish I could eloquently explain how much I love the man I am being blessed to marry in 2 months. He is my knight in shining armor and his actions on Friday showed his raw and genuine love for me. In every relationship there are defining moments that change it for the better and sometimes the worse…that moment changed my relationship, it made it grow and develop into something I don’t even truly understand. I do know I will never let him go, I will hold him forever and every night I will get on my knees and thank the heavens he was sent to me.

Weekend Recap...

I had a real weekend and I LOVED it! I still had to work a bazillion hours, but I had one whole day for myself and enjoyed every minute.

We took a road trip to officially see the chapel and it was GORGEOUS, It made me even more excited for that day to get here. The only downfall is this little hike you have to take from the main building to get to the actual chapel. (re-evaluating my shoe choice), but knowing who will be waiting up there for me, its totally worth it.

We also hung out with friends and ate great BBQ, I got to assist on a wedding at work and learned just how stressful it really is, Ate a ton of dessert and I think i found my next school option...LOL!

Throughout all the fun we got to have, many of our friends were going through a more stressful time. There have been some horrible fires burning very close to Austin and the surrounding areas. I've been hearing some horror stories of families having to evcuate their homes and actually losing them. Its so sad. These are the things that really make you APPRECIATE everything.

Where the hell have I been...

Well what happend was...

I’m working 7 days a week. I had to switch my normal work schedule so I work 10 hour days Monday through Thursday and then I work for my externship Friday through Sunday. I have NO free time… I haven’t had time to put on one pretty dress, or glittery makeup in two weeks. I smell like buttercream all the time!! (which is not a bad thing, until dogs and small children start following you.)

When I was in school I was stressed and occupied Monday through Friday, but I had all weekend to relax, not so much anymore. Plus my externship ends on the 4th of November and we get married on the 19th, so I am trying to figure out how I am going to get everything accomplished during my limited time. The good thing is how much the boy has stepped up to make things EASIER for me. I mean from doing laundry, grocery shopping, and cooking dinner (Now if I could only get him to bathe the dog..HINT..HINT!!). It fills my heart to know I have someone who is willing to fill in, to ease my mind.

I guess I kind of Love this kid!

So the shoes I am wearing in the pic, I got them from Target. I purchased the brown ones when they first came out, because wanted to start wearing more wedges and they were super comfortable, and a steal at 30 bucks. Well I was doing my weekly Target trip when I saw the black ones and guess what they were on clearance for 13 bucks. HOW FRUSTRASTING!! Don’t you hate that, I know if I would have waited for the shoes to go on sale they wouldn’t had my size, but I start to look and they have like 20 pair of both the black and brown on sale in my size…I swear Shopping…LOL

(I can't believe how dark my arms have gotten from the rest of my body...LOL)

It’s over…finally; no more class and guess what…I MISS IT!! It hasn’t been one day yet and I am already missing, the stress, the lack of sleep, the deadlines (yes, I know I am CRAZY). The last day of class was so much fun, my final project was crepe suzettes,we had pot luck and said our goodbyes. We even signed our jackets, it felt like 6th grade all over again ( Later that night we went out for drinks and I got pretty TIPSY on mimosas…I swear wine and champagne can kick my butt harder than tequila.)

My externship starts on Friday and over the weekend I got called for an interview at a local cupcake place, so things are looking up!!
The weekend was spent like always, good food, great laughs and movies. We went and saw “Cowboys and Aliens”. I should have listened to the advice I was told and stayed home. I was bored within the first 15 mins of the movie and had to keep pinching myself to stay awake. The movie wasn’t horrible; it just wasn’t worth the 20 bucks we spent on movie tickets. I will never stray from your advice, girlie!! During the trailers we saw a preview for “Scarface”, when I leaned over to the boy and said I’ve never seen this movie, I got the dirtiest look EVER. I guess I am the only person in the ENTIRE WORLD (according to his statistics) that has never seen this movie. So guess what I am doing tonight, being schooled on how to be a drug king pin…oh the joys of free time.

I’ve also decided to get my butt into gear and set some real goals on getting Dollface Delights back into order. I want to do some rebranding, get a new website and marketing material, update the blog and advertise…advertise. I am setting weekly goals for myself so by time I am done with my externship I will be up and running!

When you can come home close to midnight, STRESSED out being a TOTAL BITCH, demanding nachos, giving out bad directions to the place for said nachos, then not wanting to share the nachos, falling asleep and hogging all of the covers, waking up at the crack of dawn and DEMANDING the heating pad and you still make sure to tell me how much you love me and kiss my forehead.

I had way more pictures that I wanted to post, but my computer was acting CRAZY and I got tired of waiting around for it to act right. So as usual the weekend went by super fast, realized I had my 2^nd dress fitting on Saturday at the last minute and for various reasons had to reschedule. I am excited to see the progress on the dress, especially since our wedding date is creeping on us quickly. We've kind of had this attitude of not making a big deal of plans, because our wedding is so small, but I know its going to be a few weeks before the day and were going to be running around like chickens with our heads cut off.

Made the yummiest crepes (okay I made the batter, after burning about 10, gave up and let the boy take over, I will admit me and any type of Pancake is a burnt disaster!) with vanilla bean pastry cream and summer berry sauce…so yummy!

Had black hair again for the weekend, with a pop of color.

(Ya, I have totally formed a GIRL CRUSH)

We are in finals this week, which is actually not that hard. I don’t know if it’s because I consider myself a professional student, but I am not stressing at all. Basically were being required to make a few items each night of things we have made over the course of our program. Some of my classmates have been FREAKING out, but I had to bring them back to reality, its MUFFINS not the LSATS…LOL

Would you believe I am actually thinking about going back to school, I would love to find another culinary school that goes more in depth with French pastries. The closest thing I have come across is located in Chicago.

We checked out a food trailer over the weekend, it was pretty snazzy and at a very reasonable price. After looking at it and thinking on it, I am even more confused as to what I want to do. Culinary school has taught me so much (minus crepes) and I really want to make sure I showcase that in my business. It would be nice to find a mentor who could guide me in the right direction. My biggest fear is not making good choices, and I will be the first one to admit my focus is not the greatest. Having someone there to answer questions and such, would be AMAZING!

No movies this weekend, instead it was laundry. (Damn that need for clean clothes)

The Japanese really know how to keep things fun and interesting. There are so many subcultures and trends that they comfortably wear out in the open, and I think that is the coolest thing EVER. Right now my favorite is the Sweet Lolita trend, I love the hair and makeup, it looks like so much fun. I mean look at this adorable dress.

It’s been 4 days since I saw one of the most AMAZING things ever and I am still slowly coming down from my SUGAR high. The Katy Perry concert was FREAKING AWESOME, every minute of it!!(even the rude drunk guy who spilled beer all over the floor and completely soaked my cute new shoes) I literally felt like someone opened up my head and let all the contents spill out and it formed her tour. It was such a good time, and a true production. Katy was cute, charismatic and super funny and I am pretty much in LOVE now!! Her fan base was KILLER too, there were all types of costumes and a sea of colored wigs (but I have to say mine was the best…LOL).

We had great seats, even though we were high as hell and at one point I swear I felt like I was going to slide over the balcony. It was also really hard to get decent photos, they had this bright spotlight on her the majority of the concert, so I only got a few good ones.

(Her outfits were so much fun!!)

I was so inspired after leaving, I love seeing people do amazing things in their own way, and she is clearly true to her self. Robyn was her opening act and she was so much fun, that little girl can dance her booty off!!

The rest of the weekend was rather laid back (I mean seriously what else could compare…last I heard Unicorns didn’t exist…LOL) We went to the movies and saw Crazy, Stupid, Love, which was really good, Ryan Gosling still SMOKING HOT! I loved the story line because it went in a direction that was so unexpected.

All in all I had a SUPER weekend!

I’m officially addicted to changing my hair color, its so much FUN!!! As you can see I’ve switched from Blue to Pink/Purple. Its really hard to see the AWESOMENESS of the color in these pictures, but lets just say I LOVE it!! I plan to keep up the changes, so make sure to stay tuned.

The weekend involved early mornings,U-haul trucks, delicious food and watching “Friends with Benefits” which was HILARIOUS. It was a great romantic comedy that even the boys will enjoy. I also got my externship at a cute little café and I am really excited to see what my next couple of weeks brings.

I spent all morning trying to score tickets to see Adele and they literally sold out in five seconds.

I am slightly bummed, but she was going to be a much bigger venue and when I saw her the first time she came to Austin it was at this little hole in the wall club where I could literally touch her, and nothing will ever compare to that. (Unless I can convince her to come and sing at our wedding)

Next weekend I get to see the amazing Katy Perry and I am so stoked. I just love her to pieces, her music, her lyrics and her style. People give me a hard time about loving her, but as my last posted “ I COULD CARELESS WHAT OTHER PEOPLE THINK”, its all about what I love and what makes me happy.

What won’t be making me happy is waking up before 7am on a Saturday to deal with a U-HUAL Truck. We (actually meaning the boy, because I will be just supervising) are moving the last of his stuff this weekend and I couldn’t be happier. I swear if we ever move again, I just plan to set everything on fire and start from scratch….ha ha.

Hopefully we will get to do some fun things, there are tons of movies coming out this weekend and it feels like its been FOREVER since we went out. Its so HOT here venturing outside of my house gives me huge fears of bursting into flames, so staying in has been our game plan most days.

In school news I have less than 3 weeks left...WOO HOO. I have several interviews for externships next week...double WOO HOO and I made my own candy bar that might have involved Bacon.

I got a sweet and surprising email from a blog reader who complimented me on my personal style and basically wanted to know how I feel so comfortable in my own skin.

I first have to say Thanks! I think it’s really cool when people compliment me on my “style”. Overall I am a loud, bright, over the top person (I tell the boy all the time I should have been born a drag queen…LOL) . I think glitter should be worn daily and I say "Go bright or go home"… I am very comfortable with who I am, I learned early on the only person I have to make happy is ME. I could careless if people stare because I have blue hair (JEALOUS) or make comments about my tattoos and piercings (HATERS) they make me happy and that’s the most important thing.

Along with my clothing style, I’ve also made sure to have my education and accomplishments behind me. If someone wants to make a comment about my outfit I am able to walk away smiling , because I know I am a good person who has done wonderful things with her life. I will never be the cookie cutter type and will always live my life for me, which sometimes includes wearing Bright Pink Lipstick while lounging on the couch watching Disney cartoons and eating cereal out of the box...thats how I roll.

Long story short, "Be true to you" as long as your not hurting yourself or anyone else, Embrace it.

I can't even explain in words how much I am loving colored hair!! I've always wanted to take the plunge, and found a safe way to test the waters. Now that I'm ADDICTED, expect to see all types of colors popping up!!

I am a few days behind on posting about our weekend, but I’ve been enjoying my summer break so much!! I’ve slept in, organized, made dinner and cookies and caught up on tons of Netflix movies.
Over the weekend we went to IKEA and picked up some adorably cute stuff for our new home office ( and the boy’s work out room), I can’t wait to show photos. We also went and saw “Bridesmaids”…OH MY GEE this movie was so funny!! I am actually mad at myself for waiting for so long to watch this. I think its definitely the Hangover for 2011. (and not that crappy Hangover 2 that just came out) I am in mucho love with Miss Kristin Wigg.

I've been watching Netflix like crazy and the last few days I watched "Revenge of the Bridesmaids", with Raven Symone (another cute funny movie)and "Blue Valentine", with Ryan Gosling and Michelle Williams.

(Yes sir, I will take two...LOL)

It was a really good movie, but quite depressing. I felt like I was looking through someone's window and watching the demise of their marriage. I still have "No Strings Attached" with Ashton Kutcher to watch, but I have heard horrible reviews about the movie. Has anyone seen it.

Were planning another trip to IKEA this weekend to pick up more stuff for our new project and I am hoping to run into a cute little 4th of July fair. (I am in dire need of some corn dog and funnel cake) I also really need to finish up my two DIY projects for the wedding, can't believe there is about 140 days until were "Jumping the Broom".

My favorite part (besides eating all the cake pieces) was doing all the shading and coloring on the flowers. This was such a learning lesson and really taught me alot.

Weekend Recap...

I had such a great visit with my little sister; we did a ton of shopping, laughing and tons of eating. We even had a scary encounter when her car randomly shut off on the freeway when I was driving, to my surprise I was the calm one. (Guess my big sister instinct kicked in).

The boy flew in early Saturday morning, and to my disappointment the airport was not near as interesting as my previous visit. My sister literally left a few hours after his arrival so we just kicked back the rest of the weekend and did nada. We finally got project “DEATH OF ERICA CLEANING” done, so it was nice to just lounge around and not have anything to do. (We even got new pillows, so thank you person who invented memory foam you truly are my new GOD!!)

In school news I am currently in advanced cake decorating techniques and were working on our final project, which is a wedding cake. Yesterday was our first day of production and I felt like I worked my booty off. After this class is over we have a week break and then there is only 6 weeks left of school as a whole. I am SO excited to be done and can’t wait to rekindle my relationship with sleep again. I'm still working on securing the perfect internship. I've gone on a few interviews but once I get there it doesn't feel right and I don't want to be stuck somewhere that I hate and don't feel like I am getting anything out if it. So wish me luck on finding something AMAZING!!

This upcoming weekend were planning a trip to IKEA and the bank to open up a joint account. Even though we’ve been together for a long time and have gotten engaged, the thought of opening a joint bank account makes it seem REAL…ha ha.

Oh, is anyone hooked on my new guilty pleasure "My Big Fat Gyspy Wedding", oh my...this show is the hottest of messes and I LOVE IT. After watching it I am totally thinking we are going in the wrong direction with our wedding. How hot would I be dressed like this...ha ha!!

Weekend Recap...

I would love to say the reason I didn’t post anything for the last couple of days was due to some exciting, life changing, FABALOUS news, but I can’t. Mainly I was just being lazy and not really feeling like doing much of anything. I am in my last 8 weeks of school and its really taking a toll on me in various ways. I’m exhausted…but what else is new. You would think after almost a year I would be adjusted to these changes, but I am up around 6 in the morning and I am literally just getting in my car to leave school around 11pm….I miss sleep…I feel unhealthy and unfocused. I just can’t wait to GRADUATE and finally start focusing on my dream job. (or a full week of good sleep...LOL)

Moving onto more positive things, my little sister is visiting for a whole week and I am so excited. (Even though I will be at work and school most of her visit…BOO!!)

The boy is away on the East coast for the week and I am so proud to say graduating with his 2nd Masters Degree. (Can I just comment on how entertained I was at 4:00 am in the airport. Lets just say that their are some real characters flying and the things people where. I am thinking about making it a weekend habit of people watching...set up with a big bucket of popcorn...ha ha)

The sis and I spent the weekend doing some major damage at the mall and then went and saw "Super 8", which was really good. It went in a different direction than I expected, but it was very enjoyable, I also loved that even though you were jumping from being scared you were laughing too. I highly recommend checking it out.

The rest of the weekend was spent laughing and just having a good time. With how I have been feeling lately it was a nice change.

The last couple of weekends we have been in embarking in PRJOECT SPRING CLEANING 2011. Through this project I have learned the following:

1. The boy has the most AMAZING organizational skills.

2. I have MAJOR hoarding tendencies. I laugh at those people on that show, but when I almost had a melt down regarding a hello kitty calendar being thrown away from 2007, I knew I was in TROUBLE.

3. The boy must really LOVE me to go through all my crap.

I am hoping by this upcoming weekend we will be done and we can finally enjoy our weekends again. I did get to sleep in, which was a great, but then I stayed up way to late watching dumb TV (I've come to the realization I am addicted to COPS, and Saved by the Bell still comes on TV, who knew..LOL), so its basically a terrible cycle I have created for myself.

The rest of our long weekend consisted of going to the mall and meeting a HUGE celebrity…

Seeing the Hangover, part II and being SHOCKED and HORRIFED. The movie had its funny moments, but for the most part they spent more time making me cringe than laughing. I am still on the fence if this will be added to the DVD collection. During one scene the boy and I actually looked at each other in pure GROSSMENT (yes I totally made up that word) at what we were seeing.

Eating yummy tacos from a local hot spot and cathing up on some Netflix movies. The best thing was actually getting to spend quality time with my love. Even though we see each other everyday, with our crazy schedules weekends are our saving grace.

This weekend went by obnoxiously fast and we hardly left the house. We tried a new food trailer called “Man bites Dog” and they had some amazing hot dogs. The boy being always adventures got a Greek dog (which was surprisingly very yummy) and my plain Jane self got a ketchup and mustard dog, but it was YUM-O. They had the softest buns; I literally could have just eaten a ton of those.

The renegade craft fair was in town so we stopped by and guess who had the cutest booth there….Twinkie Chan. If you don’t know who she is check out her blog here. She makes the cutest accessories and I jumped at the chance to own one. I ended up getting a cupcake you can wear in your hair and it’s ADOR-able!!

The rest of the weekend included:

Pancakes at midnight, Yummy tacos, l0unging in bed watching Disney’s “Tangled” (which was uber cute), and FINALLY finishing my horrid closet.

I also got my glitter and plan on working on my shoes this upcoming weekend, plus I have another wedding DIY in store....YAY!!

I still can’t believe the amazing weather we got this weekend. It was so nice and breezy, not to warm, just perfection!! Friday went out with my favorite ladies from class for drinks, always a laugh out loud good time. We were stoked that we all passed our finals with A’s, so what better way to celebrate then TEQUILA…LOL!

Saturday was my dress fitting and it went great. The dress was beyond my expectations; it has such a simple elegance I can’t wait until it’s completely finished.

I would post pictures, but the boy reads my blog and I want him to be SURPRISED! Also we went shoe shopping and I SCORED. We ran into payless and they have a wedding line, well I tried on a few things didn’t find anything I liked and all of the sudden the boy is like what about these, they were PERFECT. The style is almost identical to the Kate Spade show minus the boy on the top, and guess what they were 10 bucks….I FREAKING NOW!! Well I bought another pair of cute shoes and since they were doing BOGO I got those bad boys for 5 bucks!! My glitter should be in today, so I am hoping to have a DIY this weekend for you guys. I can’t even explain my excitement.

We went and saw “Thor” another just okay movie. Now my movie rant…why the HELL-O Kitty do people pay 10 bucks for a movie ticket to sit and talk the WHOLE DAMN movie. OMG, people that is not fun, cute or appreciated to hear your annoying conversation the whole movie, its AGGRAVATING!! Hey I got an idea if you want to talk, STAY HOME…its FREE!! I’ve gotten to the point were I don’t even enjoy going to the movies anymore because people IRK me so much. The rudeness is just too much to take, oh and I can’t forget when his cell phone went off 4 times, BLARING some crazy song. Now stepping off my soap box...

Spent the rest of the weekend doing major Spring cleaning…the boy had the kitchen and I tackled my ridiculous CRAZY closet. I have WAY too much crap for one person and my poor little closet is taking a beating for it!! Plus it’s so HARD for me to get rid of stuff, even if I never wear it. Does anyone else have that problem or suggestions. I will put it in the giveaway pile, and then talk myself into keeping it...I'm such a HOARDER...LOL!

I’m going this Saturday for my 1st dress fitting and I am so NERVOUS. Being a very anal type A person, it’s hard for me to let go of control and letting someone have free reign of something concerning my life, well thats all new to me. Without knowing what my dress is going to look like, I haven’t been able to really start looking for accessories, because I want to make sure everything coordinates and meshes really well.

One thing that has been constant is my obession with having GLITTER shoes. I've been searching online and different stores to find a perfect glitter heel, that is major in the sparkle and bling department. During my search I came across these Kate Spade shoes and feel in love.

Then I saw the price and my heart was broken into a billion little pieces. I know its my wedding, but I just can't see paying $300 for a pair of shoes for one day. I kept searching and found another pair on Ebay and got super excited, as they were within a price range I could order 2 or 3 pair if I wanted.

But guess what, they are SOLD OUT...yes sold out, how DARE they!! I am letting my imagination run wild and consider that their must be some drag convention going on where a glitter heel was a requirement, so its okay!!

Well my bestie Google (he still can't believe I use to kick it with Yahoo, I know..young and stupid!) finally gave me the most AMAZING solution to my problem!! DIY, duh Erica!! I came across a wedding website where this bride made her own glitter shoes from a pair of heels she found from Goodwill, are you ready to be blown away.

How amazing are these shoes she made. With the help of my other BFF Amazon I was able to find the glitter n our wedding colors.

So After my dress fitting, I plan to start hunting for the perfect pair of shoes to Gliffterfi!

I am hoping for a fun filled weekend and not one filled with tears because my dress is horrible and I am subjected to wear a burlap sack to my wedding...LOL!!

Weekend Recap (GIVEAWAY TIME!!)

I am kind of frustrated right now! I ordered some stuff last week and according to the USPS website and delivery confirmation the package was delivered to me on Friday at 5:00pm. Well USPS no package was delivered, so you and your stupid system LIE!! I had to file a claim on Saturday and its been a big headache, and as of this morning..NADA has been accomplished or delivered. So the moral of this little story is don’t waste your money on delivery confirmation, because as stated above it LIES!!

On to the other part of my weekend, we had our high tea at school and it was AMAZING!! We had to serve our guest, but after they left we totally pigged out on all the leftovers and it was SO GOOD!! I am still dreaming about the mini strawberry shortcakes we made.

Culinary school has its flaws, but when we accomplish things like this, it makes me truly understand why I am there!

We didn’t eat anywhere new, went and saw "Fast and the Furious" (which was eh…just okay, well in my book anyways). Then I pretty much laid on the couch thinking about all the projects I could be accomplishing…LOL!!

So it’s pretty INSANE to me that I have hit over 300 followers. I know there are tons of blogs out there who are surpassing those numbers, but for me this was never meant to be a place to just get followers. I am stoked this week flew by for me, because this lack of sleep thing is totally catching up with me!! At the moment I can't even think straight to think about plans for this weekend, but just knowing I get to turn off my alarm is making me the happiest girl EVER.

Tonight in class were doing a high tea, and we made a ton of sweet and savory, (I fire roasted my first red pepper last night) so its going to be a good night.

Thanks for all the kind words about my “Stand Up” moment. Can I just say that coming into work things were a WHOLE lot better!! It just confirmed my last statement, that I will continue to take action when things start to bother me.

Over the weekend I did something super fun….I wore a WIG…So if you have been following me you know my obsession with becoming a red head. A few weeks ago we stopped in a beauty supply store and I found my solution. Can I just say how much I LOVE IT. Its super bright and crazy and totally me!!! I had to make a few snips and alterations, but the final product came out perfect.

(I believe I have found my new OBESSION!!)

As for the rest of our weekend, we had plans to go and see “Fast and the Furious”, well that never happened. I swear the whole city of Austin had the same plan and all of the shows were either SOLD OUT or jammed packed to capacity….maybe this upcoming weekend his dreams can be fullfilled. So instead of the movies we found ourselves at Wal-mart grocery shopping...you know we live the glamorous life! Have you ever noticed the craziest people come out to do their grocery shopping at night....Its always a good time!

We also tried out a new local place called the Galaxy Cafe and had some super yummy food! I am pretty much sold on any place that has caramelized onions on their menu.

I did a post a few weekends ago, and made comment about the terrible shirt the boy was wearing. You can check it out if you need a reminder here. Well to spite me he has started a little collection. These few gems are from this weekend...

Progress…Progression….I took the first step to rectify my situation. I spoke up! I went to the problem and addressed my issues, concerns and frustration and can I just say it felt AMAZING. I felt like a huge balloon filled up with angry air (if that even makes sense…LOL) and I was able to just release everything. I gave that person a big piece of my mind and though the problem is not fully corrected I am able to feel good that I made the first step to change my negative situation.

At this point I feel things can only get better, I have removed that stress off my back. I have decided to never allow myself to be put in a situation like this again. I was blessed with a mouth (a big one at that) and I will never be unheard again. If I have an issues or concern I am going to voice my feelings about it and go on with my “Blessed” life.

Plus I don’t get paid enough to be stressing so much over this situation…I figure at least if I was doing pole dances I would get the perk of wearing glitter every day to work!

I plan on having a WONDERFUL weekend, enjoying my Loves, eating good food and buying something that makes me smile!

Okay, I needed to get that out, before my head exploded. I am in situation that I must encounter on a daily basis that drives me INSANE. It’s something that I shouldn’t allow to effect my life so much, but I can’t help it. It makes me kookoo bananas that everyday I have to witness this craziness and when I tried to speak up I was told it was none of my business..um okay!

My friends and family are SO FREAKING tired of me complaining about it, and honestly I’m sick and tired of it being a part of my life and I swear the next person who tells me I should just suck it up and be happy, is going to get punched in the face.

Basically I need to KILL my Job (and buy some new lipstick…you know how I roll!)

This was such a low key weekend, we literally went out for a couple of hours and then spent the rest of the time at home. Were in the process of going through things for our big “Move-in” in a couple of months, and I am slowly realizing I have a TON of stuff, on top of that I’m kind of selfish so I thought giving up some of my space was going to be the death of me.

The thing is you know you truly LOVE someone when things are so easy. We moved in some of his stuff and it felt right, everything meshed together and I know this was a good indication of our future together.

Along with that, I also found out I don't know how to cook a pancake (unless black and charbroiled is your thing) , I shouldn't chit chat it up when I am using sharp knifes (I cut myself TWICE in class, and now have band-aids covering most of my fingers) and I can easily be talked into purchasing the most random things. (PINK WIG...LOL)

Weekend Recap...

We finally made it to the zoo…and it was kind of Lame. I know I am adult, but can’t I have high expectations and expect to be dazzled by animals. We were going to go on Saturday but after the boy tried and tried to get me up, he just gave up and snuggled up with me and we woke up at 3:00…yes 3:00 p.m, which means we didn’t actually leave the house until almost 5. The sad thing is while we were out and about all we did was complain about how tired we were…ha ha. Were such Sleep Whores!!

Well on Sunday we got up pretty early (actually I kind of sleep walked to the car and passed back out once in the car, but hey I made it to the car) and ventured out to the zoo. It was actually pretty nice and cool and not a ton of people when we got there, so we start checking out the scene. I think they should consider changing their name from Zoo to House of Birds. That’s all they had there were stupid birds…loud birds, really loud birds, bright birds, bald birds…blah blah blah BIRDS!!

Then when we finally made it over to the cool animals, (Hey Mr. Lion) they were ALL Sleeping, I was like really animals your going to sleep when I got my butt up to come and gawk at you. I could have totally stayed at home and watched Loco sleep, for FREE. In the end it was still kind of fun to go on a mini trip and realize OMG, we are so not ready for children (there were some Bad kids running around, with no home training)!! Plus I got to make a stop at the outlet and add to my ever growing Blush collection. (Funny thing, I actually ended up buying a blush I already had...and totally getting a lecture that I am blush hoarder...WELL I NEVER!!)

On another note, the boy calls me at work the other day to tell me he is cleaning out his email and has all of the emails I’ve sent him, over 400 (CRAZY). So I told him to send me the first email between us and it made me chuckle, because it seems SO LONG ago, 2007 to be exact. At the time we started “dating”, we didn’t live in the same town, so it was a lot of emailing, texts and phone convo’s, but honestly I think that’s one of the reason were still going strong. We were actually able to get to know each other and become friends, before jumping into a relationship. In the email there were some pictures attached that I had sent him, so I had to share. Here is me circa 2007…LOL!!

I’m crushing over the fact…that after almost 4 years you still want to hold my hand in the car.

My love grows daily…and I can’t get enough of your smile and those green eyes.

I am beyond blessed… to have someone who loves me, fake hair, bright lips and all. (but secretly I know you love me most fresh face)

I thank my lucky stars …you enjoy cartoons as much as I do.

Oh before I go…you should know I am hopelessly in love with you…and love that you don’t make fun of me for picking one movie theater over another…because I like the popcorn better.

And I am thankful its Friday and get to have late night dinner with you, drinking cranberry juice and laughing with her favorite CRAZY waitress!!

Weekend Recap...

I had plans this weekend to be a good blogger and actually use my camera (and not my beloved IPhone) and take tons of lovely pictures. Well I did that, I took tons of lovely pictures, but now I can’t find my stupid cord so they are all stuck in my camera….BOO (Double BOO because I had on the cutest dress perfect for spring!!) So your stuck again with the few pictures I did take with my phone.

We didn’t make it out to the zoo, mainly because I was in a sleep like coma and couldn’t Muster the energy to get up a decent time …but it’s on the agenda for next weekend. We went and saw “Hanna”; it was really good, different than expected, but still really good. We took the fur baby to the dog park, and within 3 mins he looked like this….

We tried an Italian restaurant we had never been before, Carrabba's Italian Grill, and stuffed ourselves with an insane amount of fried cheese, bread and PASTA!!

Played around with fun headgear...

And had a very random encounter. So last week in Austin was Texas Relays, the only way I can describe it, basically it’s the African-American Spring break here in Austin. Tons and Tons of people come from all over to party for this weekend, (on a side note after living in Texas for almost 5 years I just found out there are actually relays that take place….LOL). Anywhoo, so the boy and I are on our way to the movies and were stopped at a light, and the car next to us is blasting music super loud. So we look over and there are two guys in the front and two girls in the back. The two girls are dancing it up and start gesturing out the window to us….so were look um look away, these people are crazy.

So of course its like a train wreck and the boy is like OMG, they are totally getting out of the car and coming over here…but no they stop in the street and start BOOTY DANCING…yes "dropping it like its hot" in the street…oh it gets better, the girl I could actually see was wearing a crop top and what I am hoping was bikini bottoms (the boy swears they were just underwear, but I wasn’t letting my mind go there). It was the most surreal CRAZY moment ever, and it definitely stuck to Austin’s motto of “Keeping things Weird”. It totally made me think of this commerical...

I have been listening to it NEW STOP!! The singer is AMAZING, the lyrics are AMAZING, its going to leave you feeling AMAZING. It has that 90's old school R&B feeling! Its just good music!!

So it’s been a minute since I talked about the Wedding, or Wedding planning. Mainly because we don’t have time to breathe, let alone plan a wedding…

Well I am going for my first dress fitting next month, and I am super nervous, because the CONTROL FREAK has not seen anything related to this dress since our first meeting. (and those were drawn sketches), so I have no idea what I am in store for..**BITES NAILS**

I’ve been thinking about little aspects of the big day, and I truly could care less about all the hoopla and hurrah that can surround a wedding. I just want a special day that legally unites me to the man I truly love. (maybe not so much this morning, for various reasons…LOL).

But here are a few things that have been inspiring my little brain when it comes to our special day…

( I am thinking of doing my hair in this manner...thoughts?)

Well I am counting down the seconds until the weekend, things going on...
Day trip to the zoo, picking up my bright pink MAC lipstick, lemon creme brulee, organizng my crazy closet, seeing "HANNA" and sleeping in (or so I would like to think, but then I will be awaken by a CRAZY little dog who has some how fallen in LOVE with the loudest dog toy...ha ha!)

Today would have been my friend Diane’s 30th birthday today. She passed away in October and was never granted the opportunity to share this day with friends and family. A day doesn’t go by where I don’t think about her, as she was a huge part of my life and that void will never be completely filled. Due to life and silly issues, I never got the chance to say Hello or Goodbye, and that truly breaks my heart.

It’s said often, but I don’t think we truly sit down and think about it, “Life is short”. You have no idea when it will be your last day, and I think many of us don’t live each day to its fullest.

We can take advantage of the simplest pleasures, hugging our loved ones, feeling the warm sun on our noses or eating yummy frozen yogurt. The boy is always asking me why I take a million pictures, and I guess its because I want the memories and a way to look back at the good times.

I’ve often thought to myself if somebody wanted to make a movie of my life, would anyone want to watch it….Don’t think so ( I don’t even think I could get it on Lifetime…LOL). I live my life in fear. Fear of change, Fear of the unknown, Fear of Failure and Success.

I know what I am capable of, but being comfortable, uncertainty and FEAR allows me to stay on the same boring path, day after day. I know what I want for my life, for my future, and I just need to get the COURAGE to do it. To be able to live my life to the fullest and treat each day like it could be my last (to a limit, no sky diving or high speed chases in this script…LOL)…that’s a blessing an opportunity that many are not granted.

I can’t continue thinking what if and letting that hold me back, only I can create my own destiny!

Things to accomplish this weekend:

1. Figure out a mini Honeymoon location. We’ve decided right after the wedding to do something small and wait until next year to get all out. Right now my vote are:

a. Mini – Chicago or St. Louis

b. Big – DISNEY WORLD

The boy wants to go somewhere tropical, but we will see who wins!!

I would love to hear suggestions on things to do on a Honeymoon (get your minds out the gutter…LOL) I just don’t want us to end up going out of town to stay in bed all day watching Law and Order SUV. (Even though thats my Show!!)

2. Take my little fur ball to the vet. (Side Story – My mom sent me new sheets, black…the day after I put them on the bed I woke up to find it COVERED with dog fur. I couldn’t believe he even had fur left on his body. At this point I don’t think the sheets can even be saved, the “Perks” of letting a little fur bot sleep with you.)

3. RELAX, RELAX and um….RELAX. I love having time off from my crazy busy schedule and enjoying this beautiful spring weather and of course EATING GOOD FOOD!!

I am also going to convince my SWEET, HANDSOME and LOVING, guy to buy me some pretty dress (wink..wink)

People can be so rude sometimes and it amazes me. I think it takes WAY more energy to be rude and ugly, then it does to put a smile on your face…. Just Saying!!

But looking at pretties that I need in my closet are making it all better…

Weekend Recap...

The weekend is over and its back to the daily grind of things…..BOO!!! Why can’t I be a princess (I mean other than in my head) so I can just do princess things all the time, like sleeping in a castle waiting for some hot guy to kiss me, or biting into an apple and falling asleep, and waiting for some hot guy to kiss me….hmm, I am sensing a trend here….I need more sleep….LOL!!

We bailed on our movie plans and stayed in again, watching some things we got from Netflix. The boy always cringes when it comes to my movie selections, but in the end we always end up laughing at the cheeseball flick I’ve selected. We ended up watching a very bad 80’s movie called “The Class of 1984”.

Basic premise; new teacher comes to a school run by a crazy gang of punk rockers, who will win!! It was super crazy and worth the hour of my life I lost from being entertained from it!! We also got the first season of Weeds, and I am loving it. Its a very clever show. Any other Weeds fans out there?

Went to a new Canjun restaurant that was super yummy. The dessert was rather, eh…but the food very much made up for that.

Made a stop into Target (my mecca!!) and they were giving out free cotton candy...SCORE!! Does anyone else love Target as much as me? They are starting to bring out their summer dresses, and my poor checkbook is already hurting.

(Please disregard the HORRIBLE shirt he is wearing, this is a very heated subject amongst us!!)

I vote that everywhere start giving out free cotton candy, I would have no problem waiting at the post office, if I know cotton candy was in the works...Just Sayin!

Also, thinking its time someone had a date with a pair of clippers, the other day bringing him in, there literally was a whole tree stuck in his fur, but we love him anyways.

I have an interview on Saturday at a cake studio for my externship, I got some plans to get my spare bedroom all organized and create a creative space where I can start working on some things that have been stored in the old noggin!! I think were going to go and see “Suckerpunch”, which is either going to be mind blowing AMAZING, or make me want to leave ninja kicking!!

My main goal is to go into this weekend with the mindset of being motivated, creative and inspired to make things Happen!!!

I’m on a blog roll this week…. Woo Hoo!! (I promise I am trying to get better) Anyhoo, the other day I was enjoying some Teen Nick when this show True Jackson, V.P came on. The concept is kind of out there, a teen girl is made Vice President at a fashion company, but hey it’s written for a demographic that might believe it. The thing that caught my attention were the super cute outfits for the main character, True. (I think I love that name too)

Since she works in an office setting, they seem to dress her in fun, modern but still age appropriate outfits. I think a lot of the stuff could still work for an old granny like me. I really love the mixing of colors, who would have thunk it…Red, White, Blue and YELLOW (that’s crazy talk!!) but it works!!

Honestly, when it comes to my taste in clothing I don’t find many TV personalities inspiring. (I think there are enough Kim Kardashian’s walking around). So its always refreshing when you come across something that gets your creative fashion juices flowing. Another person I always took note from, was Niecy Nash (minus Reno 911…LOL)

It's Tuesday and I actually managed to make it to work still standing (LOL) and thought I would share a few things that are making my day!

I love sharing music, I love sharing songs that make me happy.

When it comes to music, I tend to fall in love with the same things. Great lyrics and music that makes my heart go flip flop. I will be the first to admit my musical taste are all over the place, but I listen with open ears and not what people EXPECT me to like!!

When I came across this band it met all my much needed requirements. “He is We”, is such a cute group that sings lyrics that are so relatable.

Steel Cut Oats....Oh how yummy these are.

I tried them awhile ago at this coffee shop and recently had the boy stalk them out at our local grocery store. They are are whole grain groats (the inner portion of the oat kernel) which have been cut into only two or three pieces by steel rather than being rolled. They are golden in color and resemble small rice pieces. (Thank you Wikipedia!!) I love mine with tons of brown sugar and sliced bananas!! Plus they are super healthy and SO FILLING!!!

I had really good intentions during Spring Break,

• to do lots of Spring cleaning,

• organize my closet (or at least pick up the clothes off the floor)

• make some sense of my spare bedroom (or at least pick up the clothes off the floor….hmm, I am sensing a trend here…LOL)

• utilize my big fancy camera and taking some pictures that don’t come off my phone.

But, guess what I spent most of my time doing, and got REALLY REALLY GOOD at…

NAPPING!!

I used my whole week to catch up on sleeping and getting addicted to Youtube videos (DAMN, you IPAD and IPHONE for making it so easy to watch a video of a cat playing a keyboard). I actually didn’t take any pictures all weekend , and now my stress free week is over and its back to the daily grind .

We did go and see "Paul", it was funny, went on a late night burger run (I heart you FIVE GUY's) and actually got to spend time quality together for a full week. As far as posts goes it was kind of lame, but honestly it was one of the best weeks EVER!!

I am really glad I am the type of person who can brush things off.

Yesterday while walking to work, I totally tripped and fell on the sidewalk. Busted up my poor knee, ripped my tights and made several construction workers fall out laughing. I hobbled my way back to my car, called my supervisor and let her know there was no way I was going to make it up 8 flights up stairs (we know I don’t do elevators) and went home. Flopped on the couch feeling sorry for myself, and then something great happened….I started laughing.

There are bigger things in the world to get upset over and a ruined pair of tights is not one of them!!

The start of my weekend was rather cruddy. In class on Friday for our test, we had to do the simplest of things, Bake and decorate a cake. I figured I was smooth sailing, until my cake feel on the floor and I almost had a heart attack.

I put my big girl pants on, and tried to go with it, fixing my cake the best I could. LOW and BEHOLD, I came out with a 190 out of 200. Even though my cake was kind of jacked up, it was baked to perfection and my frosting was amazing(Per my instructor words).
Culinary school has really helped me to not freak out so quickly. The old me would have chunked that stupid cake in the trash and went home to sulk, but now when something bad happens, I will just walk away for a few mins and then come back to re-evaluate the situation. I am totally becoming a GROWN-UP (YAY!!)

We didn’t do much the rest of the weekend, mainly recouped from the long week (AKA, lying on the couch watching cartoons) and enjoying the amazing weather!! (AKA, riding in the car with the window down...LOL)

My Netflix que sent us a little gem to watch and it was CRAZY.

I love those 70's Exploitation/Grindhouse films. They are normally filled with sterotypes and crazy situations, basically a hot mess, but those are my kind of movies. If you like anything by Quentin Tarantino, you will love these films, he got a ton of his inspiration from them.

I realized I never posted this, but I got into a car accident about two weeks ago. A guy slammed on his breaks, I slammed into him and my poor car took ALL of the damage. The boy and I have been carpooling and he has also taken up bike riding. (I’m so proud of my little exercise fiend) but I am hoping this week my car will be done with repairs and I can get it back. This week is also Spring Break, so I plan to RELAX like crazy and tackle my crazy closet. It looks like my closet throw up clothes, they are EVERYWHERE...LOL!!

One last thing, I get alot of messages about the make up I wear, and I totally tried to do the whole makeup blog thing, but realized I just don't have the time for it. Do you guys want me to start listing the products I use in my pics? Let me know...Feedback.!!

Whats your Type...

I went to the doctor today to get some test done for my carpel tunnel issues. (OH MY CUPCAKE, those test sucked BOOTY!! They basically shock the hell out of you and then stick you with a bunch of needles; it was a very sickening pain.) During the testing the doctor kept saying to me to relax and not be so tense, those comments got me thinking. I get that comment made to me a lot… A few weeks ago at the dentist I was told I need to learn how to relax more, they could see where I was clenching my teeth from stress and being overly tensed.

I’ve always considered myself a pretty high strung person, its just the way I roll. According to Wikipedia (the most accurate and honest place you can get information…LOL) there are two types of personality types A and B, I am considered an A. (you can read more here)

I found a quiz on Discovery Health to determine my personality type and at a 95% rating I am very much an A.

This basically means the following:

Type A persons tend to measure their success in terms of how many or how much of everything they acquire. They are generally dissatisfied with the world, including themselves. They are quite rigid in thought and conduct and tend to distrust others. In addition, they experience difficulty expressing their emotions, are generally very critical of themselves and others, and are of increased vulnerability to the physical and emotional effects of stress. Persons displaying Type A behaviors do not know how and when to relax - they feel impatient with the pace of most events. They strive to do too much at once and others often get tense and feel threatened in their presence.

I can honestly say I agree with about 100% of this, I am VERY VERY Hard on myself. The boy tells me this all the time, but I can’t help it. I expect perfection from myself and everyone around me, which kind of makes me see why its hard for me to have friends in my life. I expect a lot from people, and do get disappointed when people don’t met the expections I set out for them. (Its the DIVA in me...LOL)

I am also the most impatient person EVER…I say all the time I was born without the patient gene, because I can’t stand WAITING. I want it NOW….LOL!

It’s funny how you never notice something about your self until it’s brought to your attention, I do get stressed very easily and never fully seem relaxed. I am always on edge and honestly don’t fully understand the concept of relaxation, but that’s me and I accept that. Who knew 30 years into life, I would learn something new about myself.

Can I be honest, of course I can be honest, it’s my blog!!!

People get on my nerves. Now there are various reasons that people irk me, make my skin crawl, drive me crazy and make me roll my eyes so far back, I fear one day they might get stuck that way.

I can’t stand lazy people, whiny people, ungrateful people, thoughtless people, needy people….OH LORDY, I could go on for ages, so I better stop. I just want it known…People get on my nerves…LOL!!

Okay, enough of my crazy ranting….on to my wonderful weekend.

We went to dinner and ate WAY too much dessert for two people…(but it was AMAZING and I am so glad we pigged out!!!

Saw Monstrous Strawberries… (According to my caculations that fruit cut out like half the fat from all that dessert...LOL)

Saw lots and lots of Hello Kitty candy ….

Stopped myself from buying huge jars of Nutella (I feared it wouldn’t make it to the car)

Spring break is coming up and even though I will be working I still would love to take a mini-vacay, just to get out of austin. Plus SXSW will be going on and I don't do all those extra people and the crowds. Is anyone coming to town for SXSW, just curious?

Have you ever had one of those days were you wake up, feeling good, put on a cute outfit, makeup is looking great, hair in place? Well I am having one of those days and I am getting vibes it can only get better….especially since its FREAKING Friday!!! Oh how I love you Friday and your fellow two friends who come after you Saturday and Sunday (Don’t tell, but Saturday is totally my favorite)

So what else’s is new in my world….lets see

I made beignets a couple of nights ago at home, and then made my self sick from eating a bazillion of them and burning myself, because I was too fat and greedy to wait for them to cool down.

I went out seeking some cute stuff to jam in my already overstuffed closet and stopped in Forever 21, but quickly left after seeing hot messes like this all over the store.

I understand as staff your busy….but come on this is ridiculous. Goodwill is run better than this!!!

Speaking of Goodwill I got the cutest red shoes EVER from there for under 10 bucks. (SCORE, I am starting to feel like one my ALL TIME Favorite DIVAS Mrs. Lexy @ BeautyFash, check her blog out here!)

I took some of my weaves out and decided to try short hair again…and each day falling more and more in love with my BIG ASS TEXAS PAGEANT hair ( My dreams are finally coming true…just waiting for the sash, MISS AWESOME 2011)

This picture actually gives a better idea of how short it is. I don't know how long it will last, but its fun for now!

I also saw a trashy movie with Nic Cage, realized my dog needs a bath (STAT!!) and played the hell out of my new Adele Cd!!

Weekend Recap...(Birthday Edition)

I am the big 3-0…and guess what I haven’t gotten any extra grey hairs, my head is still attached and I am still pretty sane. This birthday milestone was pretty hard on me, leaving my twenties and entering my DIRTY THIRTIES….for some reason I thought I would wake up feeling changed, like an old, dried up version of myself…but nothing, zip, nada…I am the same old me and its actually silly to think that I would become a different person because of another year.

Now on to the birthday weekend, I woke up bright and early ready for some yummy crepes for my birthday lunch. We set out to drive literally 10 minutes from my apartment, but it turned into the most horrific, car sickening 40 minutes of my life. Unknown to me, there was a huge marathon going on in Austin (they said over 22 thousand people showed up to this thing, from all over the world and a couple actually got married in the middle of it…CRAZY!!!) over the weekend, so there was a ton of traffic, walking and driving downtown, so it was busy…busy.

We get to the crepe place and it was told there was an HOUR wait. An hour wait for a French burrito….NO THANK YOU!! Feeling very bummed and nauseated we drove across town to the Cheesecake Factory and had tons of yummy tapas and my birthday stand by Strawberry Shortcake. It was so yummy!!

(you can never go wrong with FRIED CHEESE!!)

Later that night we met up with a ton of people from my class at this place called Main Event, which was pretty much an adult Chucky Cheese. We started out playing glow in the dark golf, which was not fun. You would have had to been on acid or something to have enjoyed that experience, I felt like I was in a crazy haunted house and ended that game quickly. We played a bunch of other games, I made an ass of myself with dance dance revolution and we bowled a billion games.

It was a total BLAST and confirmed that Thirty is just another age to mark off.

I had a very blessed and eventful birthday and I am beyond thankful to have had so many people wanting to make me feel like a super star on my special day.

Oh, ya I also got my Katy Perry tickets…Thanks LOVE!!

Before I go I had to show you the FANCY dessert we made on Monday. I love how it came out, but let me tell you this thing was way too consuming and bland to ever want to make it again.

Weekend Recap...(Valentines Edition)

My weekend was cut very short, because I had class on Saturday. By time I woke up it was time for class and way too late to do anything afterward. All the weekend the boy had been telling me that he wasn’t going to go all out this year for Valentines Day, since he had just splurged on my ring so I wasn’t expecting anything. But being the sweetheart I feel in love with, I was surprised at work with a delivery of roses, chocolates and a cute little teddy bear and to make the day even better I was surprised that night with an amazing meal (he cooked himself) and chocolate covered strawberries. (I guess he is a keeper!!)

In class on Monday one of my classmates made the cutest little felt valentines (which of course I forgot to take a picture of). She made little felt hearts, pieces of bacon, eggs, butter and tacos. All in all I had a wonderful Valentines Day!!

In class were doing custards and mousses for the next couple of weeks and last night I got to try Crème Brulee for the first time.

OH MY BABY JESUS….that stuff was so amazing. Its like eating creamy vanilla with a crunchy crust on top…AMAZING!!!

I still love culinary school despite the schedule and being exhausted 99% of my week. The only thing I dislike is how high school it can feel. It’s been a very long time since I’ve been in an environment where people are so childish, gossipy and get their feelings hurt so easily.

A lot of people are not focused on the big picture of learning culinary arts. They come to school to see who likes them and how many friends they can make. It can get quite old dealing with the nonsense and drama that can ensue during class time, but knowing how hard it was for me to be able to attend this school, helps me see past a lot of that. Also I got another scholarship a few weeks ago, I had applied for it last year and got called that I won it. Things like that make it so worth it, along with knowing what I will achieve this upcoming November. I am actually consider taking the culinary end of the program after this. That program would focus on food overall...but its something I am still pondering.

Valentines time is upon us and I got to thinking of my younger years, the days when “going out” included a weekend at the skating ring, texting was a handwritten note and sneaking late night phone calls was a common occurrence on a school night.

With the help of my sister we decided to create a dedication in memory of those days…

These songs bring back so many memories, its crazy!!! I can remember skating backward (and I was like the MOST AMAZING SKATER), holding hands with my "boyfriend" the love of my life, the boy I was meant to spend the rest of that slow skate with (I had to keep my options open...LOL)

Oh my, this song was the Jam of all Jam's. I think everyone and their mama had this CD. (I know my Mama did...LOL)

Girls, Girls…remember this song tugging at your heart, helping you get through all the issues you and your man were going through. (Finding out he called another girl on the phone…OH NO HE DIDN’T)

Weekend Recap...

Something very strange happened last week, it snowed. All day on Thursday there were rumors of this Great Blizzard set to hit Austin, so people were preparing like it was freaking doomsday. Well on the drive home from school we actually did encounter, but honestly I was not expecting much more.

Well at 6:30 it was official, School and Work were cancelled due to snow. Being the sleepy head I am, I didn’t even look out the window, I just rolled back over and went to sleep.

So around noon (I need my beauty sleep) I finally wake up and guess what…all the DAMN snow was GONE…melted, vanished. But being postive, I got to miss work and school, got my car fixed (Thank you Wal-mart and Love), broke out my Burberry Wellies (which were actually quite unnecessary, being there was no actual snow to trudge around in, but I think I looked totally cute in them), wore my new dress from Forever 21( I was super surprised I could fit into their Large, that place makes me nervous when it comes to sizes).

I also baked up a storm, I made a Lime Angel Food Cake (which the boy INHALED before I could take a picture), chocolate chip cookies and chicken and spinach hand pies.

So it was a pretty productive “SNOW” day!!

Also, after blow drying my hair I totally realized I looked like a 70’s porn star (LOL) and had to document….so introducing Coco Darling!

My birthday will be here in 17 Days (in case u were wondering, because you wanted to buy me a wonderful and awesome gift….you know just putting it out there). I am going to be a year older and with age I am realizing there are some things I want to change about myself.

One thing that has always been part of my personality is being a pessimist. I am quick to think the glass is half empty, but I’ve been trying to think more positive and not get so upset and worked up about things I can’t change. Someone said to me what you put out there is what you shall receive, so I don't want negativity to come my way and want to make an honest effort to be more upbeat about situtations.

So here goes…

Its Thursday… (Which means its closer to Friday…woo hoo)

It’s VERY cold… (Which means I get to snuggle closer to my loved ones!)

My car wouldn’t start… (Which means I got to car pool and spend extra time with the boy.)

I have to be in class for 5 hours (Which means I get to laugh and eat good food with great people)

Wow that wasn't too hard....hopefully I can keep it up and only good things will come my way.

Weekend Recap...

I am feeling quite accomplished after this weekend, I met with the dress designer who is creating my CUSTOM dress. I am so excited (because she is local and I can watch my dress come to life, locally) and I left after our meeting feeling like my dress dreams were in great hands. The designer’s name is Anslee Connell and her company is Savannah Red, you can check out her website here.

We also might have found the place for our reception. In August I will have to do an externship for school and I was doing some research for places and came across the cutest French inspired bakery, named La Patissere. Well we stopped in on Saturday, and all I can say is SWOON.

We just made those Millefeuille ( also known as Napoleons) in class last week, here is mine....

Well we found out they rent their space so were in talks to see if we can make it happen. I am also meeting with the owner on Wednesday about my externship, so I am STOKED. (Bonus info, she also graduated from the same school I am going to, so that is the coolest)

Another thing I can check off my list is our photographer. So, I put an ad on Craigslist for a photographer to see what was out there…OH MY CUPCAKE, we got so many freaking responses it was crazy. ( I listed at the end of November and were still getting emails from people) Well we got every type of photographer you can imagine and a few creepers (What do you expect its Craigslist…LOL). I was actually surprised at the amount of people who were out of state who responded. Well after pouring over tons and tons of websites (and hysterically laughing at a few…ya were JERKS!) We came across an email that was perfect. The way the photographer described her work, were almost the exact words I would describe us and how we want our wedding reflected. So I emailed her back and found out she is actually located in Seattle. After speaking with her I totally fell in love (she was as sweet as can be) and was ready to sign here up. Got all Austiney and had a yummy healthy lunch at Whole Foods ( DISREGARD the gallon of ranch dressing)

And the best thing EVER...finding this mint condition AWESOME Kaboodle for 2 bucks at GoodWill. I am totally bringing this thing back into style!!

Its Wednesday Time...

My back is killing me, from rolling out stupid puff pastry dough….but OH BABY GEEZUS that dough was finger licking good. I swear the French have a tendency to make things super complex and time consuming, but so yummy!! We made these things called Chausson, which is basically a French Apple Turnover, its made with Puff pastry and a cooked apple filling. (If you have never had puff pastry, imagine butter encased in a flaky crust…its so amazing.)

Oh, can I just say that my excitement for the release of this album is BEYOND WORDS. I love this chick SO MUCH, her music, her style she is a true icon. The boy and I saw her when she came to Austin and it was such an amazing concert. She was so personable, and that voice….whoa that voice.

Weekend Recap....

Last week was HELL….we had three days to create a 60 piece petit four platter and it was insane. We had to come up with everything, the flavor, design (I did a coconut, lime and chocolate theme), and your production schedule along with working with 20 other people in your way and a limited amount of time each day to get everything done. Lets just say I was S-T-R-E-S-S-E-D out!!!

I felt so proud and accomplished when I was the second person to be finished and I ended the class with an A…..HOLLA!! The crappy thing was we didn’t get to eat anything, because another class was going to be using our desserts for something else….and I didn’t get a picture, so BOO to that!!! To celebrate the boy and I did a very late dinner at Denny’s (I LOVE that place…I mean you can get a whole meal for under 5 bucks...LOL).

The rest of the weekend we stayed in, watched movies ( I caught the worst (which in my world means THE BEST) 80’s horror film called “Bloody Birthday”, its about a group of kids who decide to celebrate their birthday by going on a killing spree…..it was the biggest HOT MESS ever and I enjoyed every bit of it.

I did my taxes and got WAY JEALOUS when I saw the boy was getting a bigger chunk of change than me…but I am still getting some moolah back (and some money is better than no money!!) and I think I am going to spend it on Katy Perry tickets. She is coming to Austin in June, and I plan to have my booty there!

I also plan to FINALLY post our engagement photos...I actually have a good excuse for this one. They are saved on a disk, which means I have to use a different computer to load them and well we have established I am pretty lazy...LOL, so that has been the delay.

MAC...MAC...MACARONS!!

I can’t not explain how excited I was for class last night…wanna know why….wanna..wanna…well we made French Macarons. Yes, those amazing little bites of heaven!! They are very detailed oriented when it comes to all the steps to get them perfect (and trust me mine where not perfect by any means) but they were so much fun and tasted great.

I made Strawberry and filled it with French Buttercream (which can only be described as tears of heaven from the Baking Gods, because it is SO FREAKING AMAZING). I plan to make MANY MANY more in all types of flavors until I can perfect the process!! (but we won’t mind eating all of the mistakes during the process).

I know your birthday was last Friday, but due to school, work and errands I didn’t get to fully shower you in Birthday goodness. I wanted to thank you for allowing me to spend another wonderful year with you. Each day that I am a part of your life I truly understand what happiness is all about.

When we were going through our engagement photos over the weekend I remember coming across my all time favorite photo. The photo that I was totally against and thought would ruin our session. Looking at this photo it shows just how much you really know us, it is truly a true reflection of our relationship…Happiness, Joy and Silliness.

What What...its Wedding Time..

So I had a plan to write about a different topic, but then I became distracted….I have wedding brain. I will be online looking for something and the next thing I know I am searching wedding dresses or flowers… we went to the mall the other day to pick up something and the next thing you know I am having the boy try on suits….ITS CRAZY!!! I am really trying not to be one of those people who allows their weddings to consume their lives….but is slowly happening…LOL! This means you too will have to suffer all my wedding ramblings….bahahaha (evil laugh)

That being said, before we left for Christmas we got the suit we ordered for the boy and it was AWFUL. ( I wish I would have taken a picture, it looked like he was playing dress up in his dads clothes...LOL!) It was way too big and too dark…but its too be expected ordering from Ebay(coming from China) . So we shipped it back and started our search again. Looking through the millions of weddings pictures I have saved I came across a ton of grooms dressed in dress pants and just a vest…and BAM, it dawned on me, this look would be perfect for our small low-key wedding. The boy loves it, I love it, now to find the perfect pieces to make the magic. (Plus its going to be much cheaper than a full suit and he can wear the pieces again).

I love looking and getting inspired for our wedding, but I kind of feel like I am behind the curve in wedding plannning. Granted were getting married in November, but in wedding years that is like 2 days...ha ha...oh well, I am just going to take it a day at a time and try not to drive me Groom crazy (anymore)!!

Weekend Recap...(New Years 2010 Edition)

I am already to a good start….actually starting a post on a Monday….look out now!!!

It’s the end of 2010 and I have a mix of happiness and sadness. So many wonderful things happened for me last year, culinary school, engagement it was pure bliss and now in 2011 I am hoping for even more. Next month I will be testing out a new age bracket (I’ve decided if this whole 30 thing doesn’t work, I am totally reverting back to 21), and getting married at the end of the year. I am excited, nervous and scared…I guess I am just human.

So onto my fun filled weekend….

I was so proud of myself because I actually made plans to follow through with one of my goals early and “be more social”. A group of people from my class decided to get together and bring in the New Year, well things fell through when we realized some people were too young to get into anywhere and others were too broke to really have a good time. So being the AMAZING person I am (what you didn’t get that memo…well check your inbox!!) I couldn’t let anyone be stuck at home on New Years, so I planned a little impromptu party and I am so glad I did. We had a blast, getting to know each other better, playing games and eating good food.

The next morning the boy and I woke up to have breakfast (actually I had dessert with eggs and bacon…LOL) and just kind of enjoyed the day together, since my crazy schedule would be starting again shortly.

And we got a sneak peak of our engagement photos, which I LOVE LOVE!! ( I can't wait until we got the rest so I can share).

One thing I LOVE about blogging is being able to look back and see how you changed or grown as a person.

I clicked on my 2010 resolution posts to see what I had accomplished and I was stoked to see I had actually accomplished a ton of the resolutions/goals I had set up for myself, for 2010. You can check it out here.

For me this is a proud accomplishment, because I will be the first one to admit I can be a little flightly and get bored with things rather quickly. So it amazes me that I have been able to maintain this blog for almost 3 years. I think I have become a much better blogger and it has really helped me to find myself in the process.

So here are my goals/resolutions for 2011...

1. Graduate Culinary school with HONORS!! (I’ve only been in school for a month, but it’s WAY harder than I expected to be, but I am working hard and have made it my mission to leave with those gold cords)

2. Plan an AMAZING wedding that is a true reflection of me and the wonderful man I am being blessed to marry. (Were trying to avoid getting wrapped up in all the unnecessary wedding crap and plan a day that makes us HAPPY, because in the end that’s what its truly all about)

3. Become more social. (I am pretty outgoing, but I have a tendency to talk myself out of doing things. I need to put myself out there more and make sure of the chapters of my life story are filled with great adventures).

4. Create my DREAM career. (I have realized that I NEVER NEVER want to work for anyone else again, (especially after my present job situation) I know I have the education and skills to create the perfect career for myself…which leads me to….

5. Make DOLLFACE DELIGHTS the most amazing company ever! ( I need to spend more time in growing my company, because it has the potential to MONSTER)

6. EMBRACE who I really am. ( So, what I am turning 30 and still love to wear Hello Kitty T-Shirts and wear colored hair extensions, I love that I have always been true to myself and need to stop caring what other people think about me)

7. Sign up for a Fitness class (I set a weight loss goal last year and FAILED, so I am going to take baby steps and find a fun class to join, wonder if they have a speed shopping…LOL)

8. Figure out how to use False Eyelashes. (I found out there is a guy in my class who does DRAG and I am so excited for him to give me make up tips and a complete DRAG MAKEOVER…WOO HOO!!)

9. Appreciate things more. ( I BITCH and MOAN a lot about my job and other things, but looking at the big picture I am pretty lucky, I have a great family, the most AMAZING boy, the cutest dog and the potential to make my dreams come true)

10. Stop being so tense!! (This one is major, I am a very Type A person and I get stressed out very easily ( My dentist actually told me he could tell I grind my teeth a lot). I can’t change everything and sometimes just need to go with the flow!)

Weekend Recap....(Christmas Edition 2010)

I had an AMAZING Christmas with my family and it sucks to be back at work this week. I left my camera at home (like a dummy)so I didn’t get to take many photos outside of my phone, and they came out kind of crappy. The boy surprised me and got me an IPAD for Christmas, I LOVE IT!!!

We also took our engagement photos, which were so much fun. It was FREEZING, but Amy was amazing and so easy to work with and just an all around nice person!!! It was refreshing to meet someone that you instantly clicked with. I can’t wait to get the photos back so I can share.

I am still getting over being sick (ya, I know!!) so this post is going to be very short and sweet. I promise to be much more exciting in the weeks to come!

I feel slightly better after taking the advice of my dad and getting some Zycam (I think for as much as it cost I should be doing back flips at the moment, but oh well).

Tonight is our last class for 2 weeks, but we met our instructor last night for our next 3 weeks of classes and it sounds BRUTLE!! We talked to some students who are graduating in January and they agreed that these classes coming up were their hardest. The class is called “ Petit Fours", its a lot of mini cakes and also where we learn to make French macroons, which is super exciting!!

(Please excuse my bushy eyebrows, I am trying to let them grow to even up...so ya, I kind look like a cave man right now!)

It’s Thursday, my weekend is getting closer and closer, I can see the light of day on my Holiday Vacation, and guess what….I AM GETTING SICK. Just my luck I am slowly feeling the signs of sickness upon me, it started off with sneezing, but now my throat is getting sore and I am coughing. I hope this thing passes really quickly, because the last thing I want to be is sick.

To make myself feel better I have been looking at wedding dresses. In the beginning I was really stuck on the idea of the boy not seeing the dress I picked out, but the thought of me being able to keep a whole secret for almost a year, makes me fall out laughing…so at this point he will most likely see whatever I get…Oh well. But right now these are the dresses I am falling head over heels for. (Only if I could get married once a month…LOL)

Weekend Recap....

I swear it seems like my weekends are getting shorter and shorter, but I am looking forward for the end of this week, because it’s Holiday Break and I will have some extra free time.

We didn’t do much this weekend, mainly because I was exhausted and its getting cold outside and me and cold do not mix. We've been all over town shopping so we can finalize our outfits for our pictures next week, I am actually starting to get nervous and excited about taking them. I mean I’ve seen some amazing engagement sessions and I really want ours to be a good reflection of us, but I have faith in our photographer!!

( I got a little sassy over the weekend and did something fun with my hair...yes I am such a REBEL...)

We meet the Chaplain who is going to perform our ceremony on Saturday and I really like him. He was very professional and left us with a good feeling that were in capable hands. He also told us a few funny stories of a few weddings he had performed, like the couple who brought their dog and then the muddy dog jumped on the bride's dress ( I WOULD DIE!!)...guess Loco is staying home...LOL!

I know we still have alot of time before the actual wedding, but I am trying to get as much crap done as possible, I don’t want to be stressing out at the last minute, so I am making tons of lists and checking them twice( I had too…LOL).

On a baking note I made the best chocolate chip cookies EVER, the secret, yes I am going to share one of my culinary secrets...LOL! It’s all in the chocolate, I know CRAZY. Well I have a pretty good chocolate chip recipe, but I hated how the chocolate chips I used never really melted, well in school we use really high quality chocolate, about 60% (this means the actual cocoa butter in the product). So I went to one of my favorite bake shops over the weekend and found that they sold chips that were 57%. They are more expensive than your Toll House or Nestle chips, but still rather reasonable, but so WORTH IT!! (You could just buy a few good quality chocolate bars and do chunk cookies too)

Also, there was a gingerbread contest at my school and these were a few of my favorites. These houses were so amazing, because everything was edible. You could really see the detail and hard work people put into these houses, it was so cool!

Random Thought of the Day...

So long long time ago (okay maybe not so long ago, but this is my story...so..ya!) Anyhoo, I made a big hoopla of trying to lose 20lbs. I got all motivated, than got less motivated and soon was in the negative with my motivation and those 20lbs are still here.

Now I am in culinary school and were eating sweets and carbs all the time, I get home super late and end up stuffing my face with crap and none of this is helping. Well if I have not blasted this info enough I am getting married. I am going to be a bride in 11 months and I really would like to not be a plump bride. Now I am not going to get all crazy about this, because as we have seen from my history I suck at this whole exercising and eating healthy thing.

I NEED to do something, I just need to find something that works for me. Something I can stick with and actually WANT to do. I think my lack of motivation comes from my small attention span and getting bored very quickly. Who knows….either way I want to look like this on my wedding day!!
